French Parsley
Anthriscus cerefolium
This herb is also known by the common name of 'Chervil'. The lacy, miniature-fern look makes it an ornamental herb, adding grace and texture to the garden. The flavor of chervil is even more unique, however. It is fresh and pungent, with hints of licorice, cucumber, and parsley, qualities that have given it a high standing in French cuisine. The young leaves are used in soups, salads, sauces, and to flavor eggs, fish, and vegetables dishes.
French Parsley Growing Tips Cut back liberally to prevent from going to seed, and use young leaves. This plant grows centrally from the ground and does not spread rapidly.
Sowing Information You can sow seed directly into fine garden soil or start indoors early, then transplant in spring when all danger of frost has passed. Spread seed on warm soil and cover with 1/8-1/4 inch of fine soil. Seeds will germinate in 10-14 days. Once plants are two to three inches tall, thin to space plants 6 inches apart. 60 days to maturity.
