Amaranthus
Red Amaranth is a salad herb with mildly flavored leaves. It adds a splash of rich color and extra nutrition to salads! The ornamental quality of its large, red-centered foliage makes a bold statement in the garden contrasting nicely with other herbs and bedding plants.
Interesting Notes This particular variety of Amaranth should not be confused with other varieties which flower. This one does not.
Amaranth, Red Growing Tips
Red Amaranth thrives in full sun and well-drained soil. Greens are well-adapted to growing in cool greenhouses for vitamin rich winter salads and cooked dishes.
Harvest about 30 days after sowing. Greens mature in about 50 days and should be harvested before flowering. Harvest young leaves for best flavor. Prefers sun and well drained soil.
The best insect pest control on young plants is the use of fabric row covers, which prevent the insect's access to the plants. Prevent disease with crop rotation and sanitation.
Sowing Information Sow from early spring through mid-summer (late summer where winter is mild). Sow thinly, covering seeds 1/4"-1/2" in rows about 18" apart.
